The PBLT (smoked pork belly, lettuce, and fried green tomato) is this week’s Off the Menu special. We take a pork belly and smoke it for 3 1/2 hours. Near the end, we coat it with brown sugar. We finish it on the grill and place it on Texas Toast along with lettuce and fried green tomatoes. Served with Sriracha mayonnaise on the side.
